Its didactic nature is driven home by the index of recipes and techniques to rear, and by the author's foreword which urges prospective chefs to copy the recipes into a notebook before attempting them as 'recipe-books have a way of getting messed when you prop them up on the kitchen-table while you are cooking, and I think you would be sorry if "The Cook-House Door" became spotted with gravy or stuck together with treacle.'
